  • 2.5–3 lb beef chuck roast
  • 2 small packets of brown gravy powder (about 1 oz each)
  • 2 cups low-sodium beef broth
  • 1 small can (10.5 oz) of thick mushroom soup
  • 1 medium yellow onion, sliced

Poor Man’s Beef and Gravy: Directions

  1. Put the beef chuck roast flat in the bottom of a big slow cooker (5 to 7 quarts). Cut off any really thick, hard pieces of fat if you need to so it lays flat.
  2. Spread the sliced onion pieces all around the beef and on top of it.
  3. Grab a medium bowl and stir together the two packets of brown gravy mix and the beef broth until the powder is mostly mixed in and there are no big dry lumps.
  4. Add the cream of mushroom soup to the same bowl and stir it all together with the gravy mix until it looks smooth and well mixed.
  5. Pour the whole gravy and soup mixture over the beef and onions in the slow cooker. Make sure the top of the meat gets covered too.
  6. Put the lid on the slow cooker. Cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is really tender and a fork can pull it apart easily.
  7. When it’s done, use two forks to pull the beef apart into big chunks or shreds right inside the slow cooker. Stir everything together so the beef mixes with the gravy and onions.
  8. Give the gravy a quick taste. Add a little salt and black pepper if it needs it. Serve the beef and gravy hot over mashed potatoes, rice, or noodles, and spoon extra gravy right on top. Enjoy!
