Ingredients

  • 2 pounds boneless, skinless chicken thighs (or breasts)

  • 2 (10.5-ounce) cans cream of chicken soup

  • 12 ounces wide egg noodles (dried)

Poor Man Chicken & Noodles: Directions

  1. Spray or oil a 5- to 6-quart slow cooker lightly for easy cleanup.

  2. Lay chicken thighs (or breasts) flat on the bottom.

  3. Spread cream of chicken soup over the chicken to cover it mostly. Skip water—the chicken makes its own gravy liquid.

  4. Put on the lid. Cook on LOW 6-7 hours or HIGH 3-4 hours, until chicken shreds easy with forks.

  5. 30 minutes before eating, boil egg noodles on stove in salted water till soft but firm. Drain good.

  6. Shred chicken in the cooker with two forks. Stir into gravy till shiny and mixed.

  7. Add hot noodles to the cooker. Stir gently to coat them all in gravy.

  8. Cover. Let sit on WARM or LOW 5-10 minutes so noodles soak up gravy and it gets thicker.

  9. Taste. Add a pinch of salt or pepper if you want (not in the three ingredients). Serve hot from the cooker!
