For the Steak Marinade
- Dry flank steak
- Quantity: 1 lb. and sliced thin against the grain.
- Notes: Thin sliced across the grain.
- Soy sauce
- Quantity: 2 tablespoons
- Cornstarch
- Quantity: 1 tablespoon
- Vegetable oil
- Quantity: 1 tablespoon
For the Stir-Fry
- Vegetable oil
- Quantity: 2 tablespoons
- Onion
- Accessories: 1 onion, large and sliced into thicks.
- Notes: Thinly sliced
- Pepper
- Volume: 1 pepper, small, sliced into thin slices (any colour)
- Notes: Thin sliced (any colour).
- Green pepper
- Amount: 1 green pepper which is cut into thin slices.
- Notes: Sliced in thin slices
- Garlic
- Measurement: 3 cloves Garlic minced.
- Notes: Minced
- Ginger
- Amount: 1-tbsp. minced ginger.
- Notes: Minced
- Beef broth
- Quantity: 1/2 cup beef broth
- Soy sauce
- Quantity: 2 tablespoons
- Oyster sauce
- Quantity: 1 Tbs. oyster sauce.
- Hoisin sauce
- Quantity: 1 Tbs. hoisin sauce.
- Rice vinegar
- Quantity: 1 Tb. rice vinegar.
- Sugar
- Quantity: 1 teaspoon sugar
- Cornstarch slurry
- Food quantity: 1 tbsp. (16g) cornstarch plus 2 tbsp. (16g) water (cornstarch slurry)
- Notes: For thickening
- Black pepper
- Quantity: 1 /4 teaspoon black pepper.
- Red pepper flakes
- Volume: 1 teaspoon red pepper flakes (best, to provide more spiciness)
- Notes: Best, to put on additional heat.
- White rice or steamed rice (fried).
- Quantity: Fried white rice, or steamed rice, to serve.

Instructions
Marinate the Steak
Add the soy sauce, the cornstarch and the vegetable oil into a medium bowl. Next place the cut flank steak in thin slices and mix it thoroughly to ensure that it is entirely covered.
Prepare the Stir-Fry Sauce
Add beef broth, soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar and black pepper into a small bowl. Set aside.
Cook the Steak
Put 2 tablespoons of vegetable oil in a large skillet or wok and heat under a high flame. The marinated steak is placed in single layer. Bake 2-3 minutes or till cooked and browned. Removed steak in the skillet and place aside.
Stir-Fry the Vegetables
In the same skillet there might be need of a little more oil. Add the bell peppers that have been sliced and the onions. Fry about 3-4 minutes or until the vegetables are tender-crisp.
Follow up with the minced garlic and ginger and cook it a little further 30 seconds till fragrant.
Combine and Thicken
Place cooked steak in the skillet and the vegetables.
Add stir-fry ready sauce and mix. Bring to a simmer.
Stir in the slurry containing cornstarch and simmer a little 1-2 minutes or until the sauce has reduced and covered the steak and vegetables.
Serve
Pepper steak is cooking in China with onions over cooked white rice or steamed rice.
