What You Need

2 pounds of chicken breasts with no skin or bones (about 4 pieces)

1/2 cup butter (1 stick), cut up

2 big lemons (slice 1 thin, squeeze juice from the other)

1 1/2 teaspoons salt

1 teaspoon black pepper

Dry chicken with paper towels. Rub salt and pepper all over.

Put chicken in a 4-6 quart slow cooker in one flat layer. A little overlap is okay.

Drop butter pieces on and around chicken. It will melt into sauce.

Put lemon slices on top and between chicken.

Pour lemon juice over everything. You will see a little liquid at bottom.

Cover. Cook on LOW 4-5 hours. Chicken should be soft and 165°F inside. LOW keeps it juicy.

Move chicken to plates. Spoon sauce and lemon slices on top.

For thicker sauce, cook uncovered on HIGH 5-10 minutes. Add more pepper if you want. Serve hot!
