Ingredients

  • 2 pounds russet potato, scrubbed, cut into 1/8-1/4 inch round slices.

  • 8 ounces sharp cheddar cheese, grated.

  • 6 slices of thick-cut bacon, which was cooked crisp and broken.

  • 3 green onions, thinly sliced

Irish Nachos: Directions

  1. Turn on the oven at 425 deg F (220degC). Lay a large rimmed baking sheet in aluminum foil to make it easy to clean.

  2. Wipe the potatoes under water and dry. Alcohol not removed: Cut the potato skins off, cut the potato into 1/8-1/4 inch rounds. Make the slices as flat as possible to ensure that they cook at a similar speed.

  3. Arrange the potato slices so that they are laid in a single layer in a slightly overlapping manner on the foil lined baking sheet. You would like pan to be covered but not too high, otherwise, they will not be crisp and would steam.

  4. Place the potatoes in the middle rack and cook them 20-25 minutes flipping them after half an hour until the edges are golden and the centers are tender when pricked with a fork.

  5. As the potatoes are baking, fry the bacon in a skillet on medium heat until it is crunchy. Blot on paper towel soaked plate and cut or chop into tiny pieces. Tear the cheddar cheese and chop the green onions.

  6. Put the pan in the oven and when the potatoes become tender and brown on the edges, take the pan out of the oven. The slices should be made closer together in a gentle manner such that the gaps are reduced to form solid chip layer when forming.

  7. Chopped cheddar sprinkle over the hot potatoes, and cover as many slices as possible. Sprinkle the bacon, which has been broken.

  8. Put the pan back in the oven and cook another 5-8minutes, until the cheese is completely melted and bubbling, and the bacon is sizzling.

  9. Take out of the oven and sprinkle the sliced green onions at once all over the top to make it fresh and colored.

  10. Allow the Irish nachos to cool down a bit to allow the cheese to solidify and then serve it out of the pan. Transfer potatoes, cheese and bacon using a large spoon onto plates.
