  1. Use a paper towel to dry the pork chops by patting them gently. Trim off any really thick pieces of fat around the edges, but leave a little bit on — it adds flavor. Drying them first helps the glaze stick better and keeps the cooking juices from getting too greasy.
  2. Grab a medium bowl or large measuring cup. Stir together the honey, soy sauce, and minced garlic until everything is mixed and the honey blends in smoothly. The sauce should look shiny and smell amazing.
