Honey Garlic Chicken and Mushrooms

Ingredients (Serves 4)

  • Chicken 
    • Quantity: 11/2 lbs (700 g) chicken thighs or breasts, cut in bite-size pieces. 
    • Notes: cut in bite-size pieces. 
  • Salt & black pepper 
    • Quantity: to taste 
  • Cornstarch 
    • Quantity: 2 tbsp cornstarch 
    • Notes: omitted, to serve as a light coating 
  • Olive oil or butter 
    • Quantity: 2 tbsp olive oil or butter 
  • Mushrooms 
    • Quantity: 8 oz (225 g) mushrooms, cut (button or cremini) 
    • Notes: cut (button or cremini) 

Honey Garlic Sauce

  • Honey 
    • Quantity: 1/3 cup honey 
  • Garlic 
    • Quantity: 4 cloves garlic, minced 
    • Notes: minced 
  • Low sodium soy sauce 
    • Quantity: 1/4 cup low sodium or low sodium soy sauce 
    • Notes: low sodium preferred 
  • Ketchup or tomato sauce 
    • Quantity: 2 tbsp ketchup or tomato sauce 
  • Rice or apple cider vinegar 
    • Quantity: 1 tbsp rice or apple cider vinegar. 
  • Sesame oil 
    • Quantity: 1 tsp sesame oil 
    • Notes: optional 
  • Chili flakes 
    • Quantity: 1/2 tsp chili flakes 
    • Notes: optional 
  • Cornstarch 
    • Quantity: 1 tsp cornstarch + 2 tbsp water 

Garnish (optional)

  • Sesame seeds 
  • Chopped green onions 

Instructions:

Prep the chicken

  • Salt and black pepper the thinnest slices of the chicken breasts on both sides. 

Sear the chicken

  • Heat olive oil and butter in a large skillet on the medium level. 
  • Add chicken and cook 3-4 minutes each side under a golden and cooked through. 
  • Take chicken out of the pan, and put aside. 

Cook the mushrooms

  • Add sliced mushrooms into the same pan. 
  • Brown and cook 3-4 minutes or until tender. 

Make the sauce

  • Add the minced garlic to the mushrooms and cook it 30 seconds till it becomes fragrant. 
  • Stir in honey and soy sauce. Let it simmer for 1-2 minutes. 

Combine & glaze

  • Return chicken to the pan. Combine and toss to cover the sauce. 
  • Additional 2-3 minutes in cooking until the sauce is filled and smooth. 

Serve

  • Serve it warm on a bed of rice, noodles, or freshly steamed vegetables.
