Ingredients

  • 6 medium beets

  • 1 cup white vinegar

  • 1 cup water

  • 1/2 cup sugar

  • 1 teaspoon salt

  • 1/2 teaspoon black peppercorns

  • 1/2 teaspoon mustard seeds

  • 2 garlic cloves

  • 1 small onion, sliced

Homemade Pickled Beets Recipe: Directions

  1. Wash the beets well. Put them in a pot of water and boil for 35–45 minutes until a fork goes in easily.

  2. Let the beets cool for a few minutes. Then gently remove the skins. Slice the peeled beets into thin pieces.

  3. In a saucepan, mix the vinegar, water, sugar, salt, peppercorns, mustard seeds, garlic, and sliced onion.

  4. Heat the pan until the liquid gently boils. Stir so the sugar melts.

  5. Put the beet slices into clean jars.

  6. Pour the hot vinegar mixture over the beets until they are fully covered.

  7. Put the lids on the jars and close them tightly. Leave the jars on the counter until they cool completely.

  8. Put the jars in the fridge and wait at least 24 hours before eating so the flavors get better.
