Description: Soft, pull-apart chicken cooked low and slow in a creamy green pesto sauce β only four easy ingredients needed. Toss it in before school, eat it for dinner. Pairs great with noodles, rice, or anything your family loves!
π Ingredients
- 2Β½ pounds chicken breasts (no bones, no skin) β or use chicken thighs
- 1 can (10.5 oz) cream of chicken soup
- 1 cup store-bought basil pesto (the light green kind from a jar or the fridge section)
- Β½ cup low-sodium chicken broth
π Directions: Herb Shredded Chicken
- Spray the inside of your slow cooker with cooking spray so nothing sticks and cleanup stays easy.
- Lay the chicken flat on the bottom. If any pieces are really thick, cut them in half so they cook all the way through and shred nicely.
- In a bowl, mix together the cream of chicken soup, pesto, and chicken broth. Stir it until it looks smooth and green all the way through.
- Pour the green sauce over the chicken. Make sure every piece gets coated. Use a spoon to move the chicken around so the sauce gets underneath too.
- Put the lid on tight. Cook on LOW for 4 to 5 hours, or on HIGH for 2Β½ to 3 hours. The chicken is ready when it feels super soft and two forks can pull it apart easily. Try not to peek β every time you lift the lid, heat escapes!
- Switch the cooker to WARM. Use two forks to pull the chicken into small pieces right in the pot. Stir everything together so the shredded chicken soaks up all that yummy sauce.
- Give the sauce a taste. If it needs a little more flavor, sprinkle in a tiny bit of salt or splash in a bit more broth. Let it sit on WARM for 10 to 15 minutes β it gets even better!
- Scoop the hot chicken and green sauce over noodles, rice, potatoes, or bread. Serve right from the slow cooker with the lid cracked open so steam can escape.
