Herb-Crusted Roasted Chicken Fillets Slow Cooker. A French friend showed me this dish, and it has been really popular ever since!

Ingredients

4 chicken fillets

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1 teaspoon dried thyme
-
1 teaspoon dried rosemary
-
1 teaspoon dried oregano
-
1/2 teaspoon paprika
-
1 tablespoon lemon juice
-
1/4 cup chicken broth
Herb-Crusted Roasted Chicken: Directions

Combine the salt, black pepper, garlic, onion, thyme, rosemary, oregano and paprika in a small bowl.

Oil the chicken fillets and then cover it evenly with the herb and spice mix.

Put the cooked fillets of chicken in the slow cooker.

Sprinkle the chicken fillets with lemon juice and chicken broth.

Cover and cook on low between 4-5 hours or until the chicken comes out soft and cooked.

Heat your oven at 425° F (220C).

Move the chicken fillets into the baking pan and roast them in the oven between 10-15 minutes or till they have a golden brown and crispy surface.

Take off the oven and leave some few minutes and then serve.
Variations & Tips

To make the flavor profile different, add one teaspoon of smoked paprika to give it a smoky taste or a pinch of cayenne pepper to give it some heat.

You may also use new herbs such as parsley or basil to give it a new taste.

In case you like it more citrusy, you can add another ingredient of grated lemon zest to the herb mixture.

To make it a proper slow cooker meal, the chicken should be accompanied by a few baby potatoes and carrots in the slow cooker.
