  • 3 pounds Yukon Gold potatoes, washed and cut into 1 1/2-inch pieces
  • 1/2 cup salted butter, melted
  • 1/2 cup honey or pure maple syrup
  • 1 teaspoon garlic salt
  • Optional: 2 tablespoons chopped fresh parsley or chives for topping

Golden Glazed Potato Chunks: Directions

  1. Grease the inside of a 4 to 6-quart slow cooker with a little butter or nonstick cooking spray so the glaze does not stick to the bottom.
  2. Wash your potatoes really well, then cut them into about 1 1/2-inch pieces. Keep the skins on because they give the potatoes a nice look and make the inside extra creamy.
  3. In a small bowl or cup, mix together the melted butter, honey, and garlic salt. Stir it all together until it looks smooth and shiny.
  4. Put the potato pieces into the slow cooker. Pour the butter and honey mixture on top of the potatoes. Use a spatula to scrape out every last drop of the glaze.
  5. Carefully stir the potatoes so the sweet sauce covers all the pieces. Spread them out into one flat layer so they all cook evenly.
  6. Put the lid on and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours. The potatoes are ready when you can easily poke them with a fork. Try not to lift the lid too much while they are cooking because letting the heat out will make them take longer.
  7. If you want the edges to get a little more golden and the sauce to get thicker, once the potatoes are soft, give them a gentle stir and prop the lid open just a little for the last 15 to 20 minutes on HIGH. This lets some of the steam out and makes the glaze nice and thick.
  8. Give the potatoes a little taste. If you want them a bit more salty, add a pinch more garlic salt. If you want them sweeter, drizzle on a little more honey.
  9. Scoop the shiny golden potatoes and all of that yummy sauce into a big serving bowl. Sprinkle chopped parsley or chives on top for a little color and serve them warm. Spoon extra glaze over each serving.
