Ingredients

  • 2 ribs boneless, skinless chicken breasts.

  • 3 peppers of any colour, sliced thinly.

  • 1 large yellow onion, which has been cut thinly.

  • 3 Tbs fajita seasoning (either purchased or prepared)

  • 1 (14.5-ounce) can undrained diced tomatoes.

Fajita Chicken Breast: Directions

  1. Prepare the vegetables: Cut the bell peppers and the onion in thin slices. Strive to achieve the same thickness in order to have them cook in the same manner and soften in the same manner.

  2. Add the vegetables: Layer the onion and the peppers: layer sliced peppers and onion in the bottom of the slow cooker in an even layer. This makes a tasty bed which keeps the chicken damp during cooking.

  3. Season the chicken: Dry the chicken breasts using paper towel. Evenly sprinkle the fajita seasoning on the top and bottom of the chicken pressing the spices to stick.

  4. Part chicken and tomatoes: cover the mixture of the pepper-onions with the seasoned chicken breasts. Add the can of diced tomatoes (including their juices) over the chicken and the vegetables evenly.

  5. Bake on low or high: COVER and bake on LOW 4-5 hours or on HIGH 2-3hrs until the chicken is cooked through and can be easily shredded with a fork and the vegetables are very tender.

  6. Shred the chicken: Place the cooked breasts of chicken on a cutting board and chop them into bite sized pieces using two forks. Add the shred of chicken to the slow cooker stirring it until it combines with the peppers, onion and the juices of cooking.

  7. Adjust seasoning: Sample the mixture and change the seasoning, where required. In case it is bland, it can be sprinkled with a pinch of salt or another burst of fajita seasoning to add flavor. When it is too thick you can thin it out with a splash of water or chicken broth.

  8. Serve: Using a spoon, pour and stuff the chicken and farm vegetable mixture into warm tortillas and garnish at once with your preferred toppings, including lime wedges, sliced avocado, shredded cheese, or sour cream.
