What You Need

  • 3 to 3½ pounds beef chuck roast (cut off extra fat)

  • 3 big leeks (use white and light green parts, wash them good)

  • 1 can (10.5 ounces) mushroom soup

  • 1 small pack (1 ounce) onion soup mix

How to Make Easy Slow Cooker Leek Beef Dinner

  1. Get the leeks ready first. Cut off the tough green tops and bottoms. Cut the good parts in half the long way. Wash them super well in cold water. Open the layers to get out all the dirt. Dry them. Slice into thin half-circles.

  2. Place the uncooked beef at the bottom of the slow cooker. If it’s too big, cut into 2 or 3 pieces.

  3. Shake the onion soup mix all over the beef. Press it so it sticks.

  4. Spread the mushroom soup on top of the beef. Use a spoon to cover most of it. Don’t add water—the meat and leeks make their own juice.

  5. Put all the sliced leeks on top of the beef. Spread them out like a blanket.

  6. Put the lid on. Cook on low for 8 to 10 hours. Or high for 4 to 5 hours. The beef should be super soft and shred easy with a fork. Low is best for extra tenderness.

  7. Take the beef out. Put on a plate. Use 2 forks to pull it into big shreds. Throw away big fat bits. Put the meat back in the cooker. Mix gently with the leeks and gravy.

  8. Taste it. Add more salt or pepper according to taste. Let it sit on warm for 10 minutes. Scoop out with lots of gravy!
