What You Need (Feeds 4 People)
- 2 1/2 to 3 pounds of chicken breasts with the skin still on (if you can find ones with bones, even better!)
- 2 regular yellow onions, peeled and sliced into thin rounds
- 1/2 cup of lemon and herb dressing from a bottle (or any light salad dressing you like)
How to Make Earth Week Chicken
Step 1: Get Your Slow Cooker Ready Lay all your onion slices flat on the bottom of your slow cooker. This makes a nice bed for the chicken to sit on and makes the juices taste better.
Step 2: Get the Chicken Ready Take your chicken and pat it dry with paper towels. This helps the skin cook really nice and crispy.
Step 3: Put the Chicken in Lay your chicken breasts on top of the onions with the skin side facing up. Make sure they’re all in one layer so they cook evenly.
Step 4: Pour the Dressing Pour your lemon herb dressing over the chicken and onions. Don’t use too much—the chicken will make its own juice as it cooks.
Step 5: Cook It Up Put the lid on your slow cooker. Cook on the LOW setting for 4 to 5 hours, or on HIGH for 2 1/2 to 3 hours. The chicken is done when it’s cooked all the way through (no pink inside).
Step 6: Let It Rest Lift the chicken out and place it on a plate. Let it sit for 5 minutes. If you want the skin to be extra crispy, you can put it in the oven for a few minutes under the broiler (but watch it so it doesn’t burn!).
Step 7: Make the Sauce Stir the onions and all the juices left in the slow cooker together. This makes a yummy sauce to pour over your chicken. Taste it and add a little more salt or squeeze of lemon juice if you want.
Step 8: Plate It Up Put your chicken on a plate. Spoon the onions and sauce on top. Eat it up!
