Drunkard Noodles is a warm and tasty meal. It has soft chicken, yummy sauces, and fresh herbs that make it full of flavor and very filling. Slow cooking enhances deep flavors, while crispy noodles add texture, creating a balanced, delicious, and slightly spicy dish perfect for any occasion.

Ingredients

  • Chicken → 1lb chicken breast or thigh, cut in thin slices.
  • Rice Noodles → 12 oz rice noodles (wide is desired)
  • Soy Sauce → 3 tbsp soy sauce
  • Oyster Sauce → 2 tbsp oyster sauce
  • Fish Sauce → 1 tbsp fish sauce (not mandatory though very traditional)
  • Brown Sugar → 1 tbsp brown sugar
  • Chili Paste/Flakes → 1 tsp chili paste or chili flakes (to taste)
  • Garlic → 1 tbsp garlic, minced
  • Red Bell Pepper → 1 red bell pepper, sliced
  • Onion → 1 small onion, sliced
  • Fresh Basil → 1 cup fresh basil leaves
  • Chicken Broth → 1/2 cup chicken broth
  • Oil → 2 tbsp oil

Drunkard Noodles: Instructions

  1. Add to Crock Pot
    Add chicken, garlic, bell pepper, onion, soy sauce, oyster sauce, fish sauce, brown sugar, chili, oil, and broth into the crock pot. Stir well.
  2. Slow Cook
    Cover and cook:

LOW: 3-4 hours

HIGH: 2 hours

  1. Add Noodles
    Add noodles of rice to warm water until soft (approximately 10 minutes).
    Pour into crock pot during the final 30 minutes.
  2. Make It Crispy
    Noodles after cooking are transferred to a hot skillet with a small amount of oil.
    Cook 3-5 minutes in a pan till edges become crispy.
  3. Finish
    Toss with fresh basil. Taste and adjust seasoning.
  4. Serve
    With additional basil and chili serve hot.
