Ingredients

  • 2 catfish fillets

  • 1 tablespoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • Lemon wedges for serving

Crispy Blackened Catfish: Directions

  1. Use a paper towel to gently dry the catfish fillets.

  2. In a small bowl, mix paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne, black pepper, and salt.

  3. Rub the spice mix all over both sides of each fillet so they are evenly coated.

  4. Heat the olive oil and butter in a large skillet over medium-high heat until the butter melts and bubbles.

  5. Place the fillets in the hot skillet and cook 3–4 minutes without moving, until the surface is dark and has a crispy crust.

  6. Turn the fillets and cook the other side 3–4 minutes until cooked through.

  7. Spoon some melted butter from the pan over the fillets while they cook for extra flavor.

  8. Remove the fish from the skillet and serve with lemon wedges.
