Slow Cooker Broccoli Chicken Creamy. This is ordered once a week by my fussy eater. The easiest and most simple, and cheesiest dinner of all.

Servings: 6

Slow Cooker Creamy Broccoli Chicken: Ingredients

Boneless, chicken pieces (thighs or breast) cut into small pieces

  • Quantity: 2 lb

  • Notes: Cut evenly to ensure the chicken cooks evenly.

Cooked condensed chicken soup

  • Quantity: 2 (10.5-oz.) cans

  • Notes: Prepares the smooth layer of the sauce.

Fresh broccoli florets, cut into bite-sized pieces

  • Quantity: 3 cups (around 1 head)

  • Notes: Add subsequently in order to leave the broccoli bright and tender.

Divided grated sharp cheddar cheese

  • Quantity: 3 cups (about 12 ounces)

  • Notes: 2 cups will be added to the sauce and 1 cup will be added to the top.

Directions

  1. There is a chance that one light sprays the interior of a 4- to 6-quart slow cooker with nonstick cooking spray, to make it easier to clean.

  2. Arrange the chicken pieces of any size in a single layer to the bottom of the slow cooker.

  3. Put the condensed cream of chicken soup and 2 cups of the shredded cheddar cheese into a medium bowl and combine them thoroughly until they appear smoothish. It will be fat and that is all all right.

  4. After pouring the cheesy soup mixture over the chicken, one should stir it gently to submerge all the pieces, as well as to evenly distribute all the components.

  5. Bake on LOW 3-4 hours or on HIGH 1 1/2-2 hours until chicken is cooked through and is extremely tender. It is necessary not to open the lid regularly to make sure that the mixture is hot and creamy.

  6. Combine the mixture after cooking the chicken. Carefully insert the fresh broccoli florets and they would be mostly covered by the hot sauce.

  7. Cook and boil on HIGH with 30 to 45 minutes or when the broccoli changes to bright green and starts being tender and not mushy. Add everything to mix broccoli in the sauce.

  8. Sprinkle the remaining 1 cup of shredded Cheddar cheese all over the top and then again and leave it to rest some 5-10 minutes, only long enough to get the cheese to melt into clear grade golden sheet.

  9. Season with a pinch of salt and pepper (if desired) and serve the creamy broccoli chicken hot in a spoon over rice, noodles or mashed potato to allow the cheddar cream sauce to absorb.

Notes

  • Do not open the slow cooker frequently whilst cooking.

  • Late addition of broccoli will help it not to go mushy.

  • It should go with rice, noodles or mashed potatoes as a complete meal.
