Christmas Pudding in the slow cooker
Ingredients:
5 cups mixed fruit, pre-soaked 4 hours in orange juice
3 eggs
1 cup brown sugar
300ml sour cream
2 1/4 cups plain flour
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon bi-carb
Method:
1. Beat well eggs & sugar till light & fluffy
2. Add fruit & sour cream (I also added a little orange essence)
3. Sift flour, nutmeg, cinnamon & bi-carb into mixture & combine. DO NOT BEAT!
4. Put mixture into well-greased pudding steamer, or 2 liter round Pyrex bowl, cover with baking paper & alfoil.
5. Place in Slow Cooker bowl, adding water till it comes halfway up the outside of steamer.
6. Place tea towel under the lid, cover & cook on high for 4 hours.
7. Let stand for 5 mins before inverting & letting cool on rack.
