Ingredients

  • 1 pound ground beef

  • 1 small onion, diced (about 1 cup)

  • 4 cups low-sodium beef broth

  • 3 cups frozen cut or shredded hash brown potatoes (diced)

  • 2 cups cheddar cheese (shredded), about 8 ounces

Cheeseburger Soup: Instructions

  1. Over medium heat in a large skillet, cook the ground beef, stirring it until browned and no longer pink. Drain excess grease.

  2. Add the chopped onion to the skillet and cook 3–4 minutes until softened and lightly flavored by the beef.

  3. Transfer the beef and onion mixture into a slow cooker. Add frozen hash brown potatoes and beef broth. Stir gently to combine.

  4. Cook on low flame for 6 to 7 hours or on high flame for 3 to 4 hours. Cook until the potatoes are soft and the flavors mix well.

  5. About 20 minutes before serving, gradually add shredded cheddar cheese in small amounts, letting each addition melt completely. Season with salt and pepper if desired.

  6. Pour the soup into bowls. If it thickens while standing, loosen with a little hot water or more broth.
