Ingredients
- 500g (about 4 cups) cabbage, finely shredded
- 4 large eggs
- 3 tbsp plain flour
- 2 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
- ½ tsp paprika
- Salt and black pepper, to taste
- 3 tbsp vegetable oil, for frying
Cabbage and Eggs: Instructions
- Place the finely shredded cabbage in a large mixing bowl or pan.
- In a separate bowl, beat the eggs thoroughly until they’re fully blended together.
- Pour the whisked eggs over the shredded cabbage.
- Add the minced garlic, chopped parsley, paprika, salt, and pepper.
- Sprinkle in the flour, then mix everything together thoroughly until well combined and slightly sticky.
- Let the mixture sit for 5 minutes to allow the flour to absorb some moisture, making it easier to shape.
- Warm the vegetable oil in a large frying pan, keeping the heat at medium.
- Scoop a portion of the cabbage mixture and shape it into a small log or patty with your hands.
- Carefully place the shaped patties into the hot oil, leaving space between each one.
- Fry for 3–4 minutes per side, until golden brown and crispy on the outside.
- Remove the cooked patties and drain on paper towels to remove excess oil.
- Repeat with the remaining mixture until all the patties are cooked.
- Serve warm, on their own or with a dipping sauce of your choice.
These crispy, savoury cabbage and egg patties are a clever way to use up cabbage while creating a satisfying dish that’s crunchy outside and tender inside — great for using up leftovers or a quick, wholesome bite.
