This Cabbage and Eggs – Crispy Fritters Recipe transforms simple shredded cabbage and eggs into golden, crispy fritters. Easy, budget-friendly, and packed with flavour, these bite-sized patties make a fantastic snack, side dish, or light meal.

Ingredients

  • 500g (about 4 cups) cabbage, finely shredded
  • 4 large eggs
  • 3 tbsp plain flour
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 3 tbsp vegetable oil, for frying

Cabbage and Eggs: Instructions

  1. Place the finely shredded cabbage in a large mixing bowl or pan.
  2. In a separate bowl, beat the eggs thoroughly until they’re fully blended together.
  3. Pour the whisked eggs over the shredded cabbage.
  4. Add the minced garlic, chopped parsley, paprika, salt, and pepper.
  5. Sprinkle in the flour, then mix everything together thoroughly until well combined and slightly sticky.
  6. Let the mixture sit for 5 minutes to allow the flour to absorb some moisture, making it easier to shape.
  7. Warm the vegetable oil in a large frying pan, keeping the heat at medium.
  8. Scoop a portion of the cabbage mixture and shape it into a small log or patty with your hands.
  9. Carefully place the shaped patties into the hot oil, leaving space between each one.
  10. Fry for 3–4 minutes per side, until golden brown and crispy on the outside.
  11. Remove the cooked patties and drain on paper towels to remove excess oil.
  12. Repeat with the remaining mixture until all the patties are cooked.
  13. Serve warm, on their own or with a dipping sauce of your choice.

These crispy, savoury cabbage and egg patties are a clever way to use up cabbage while creating a satisfying dish that’s crunchy outside and tender inside — great for using up leftovers or a quick, wholesome bite.
