  • Ketchup → 1 cup, divided

  • Packed brown sugar → 1/2 cup

Brown Sugar Meatloaf: Directions

  1. To prevent sticking, use nonstick cooking spray or a coating of oil to lightly cover the inside of a 6-quart slow cooker which will allow it to be easier to clean.

  2. Add the ground beef, breadcrumbs, eggs, kosher salt, and 1/2 cup of the ketchup into a big mixing bowl. With clean hands or a heavy spoon, stir and stir until all is mixed up, being careful not to overdo the mixing of the meat in order that the resultant loaf will be tender.

  3. Put the uncooked mixture of ground beef into the ready slow cooker and form it into an even and oval loaf in the very center of the crock, leaving some room on the sides to allow the heat to circulate.

  4. Add the remaining 1/2 cup ketchup and the brown sugar into a small bowl and mix the mixture until it is smooth and the sugar has dissolved in it mostly; this is your sweet-tangy glaze.

  5. Add the ketchup and brown sugar glaze in even layers over the top of the raw meatloaf mixture in the slow cooker allowing it to overflow down the sides and cover the top of the meatloaf well as you would with a traditional oven-baked meatloaf.

  6. Lid the slow cooker, cook on LOW (between 5 and 6 hours) or HIGH (between 3 and 3 1/2 hours) until the meatloaf is cooked and the center of the meatloaf reaches a minimum of 160°F when an instant-read thermometer is placed into it.

  7. When you have cooked it, tip the loaf in the slow cooker with a spoon or spatula, and spoon out all the grease around the edges, as necessary. Allow the meatloaf to cool 10 to 15 minutes, with the lid on, in the preheated slow cooker in order to firm up to allow cut slices.

  8. Lift the meatloaf out of the slow cooker and onto a serving platter using two large spatulas or a large spoon and a spatula. Some of the glaze on the top and sides may be spooned back on top and over the sides and then slice and serve warm.
