BBQ Pineapple Chicken Packets Slow Cooker. This easy slow cooker BBQ pineapple chicken uses just 3 things and smells so yummy that neighbors might knock on your door. It has that cozy barbecue taste from the Midwest, but with fun pineapple from a can. Put it all in foil packs and let it cook slow all day. You get soft chicken in sweet-sour sauce that seems hard to make—but you just open 3 packages.

Ingredients

  • 2 pounds chicken breasts without bones or skin (about 4 medium ones)

  • 1 1/2 cups thick BBQ sauce (use your favorite from the store, split up)

  • 1 can (20 ounces) pineapple chunks in juice, drained really good

BBQ Pineapple Chicken Packets: Directions

  1. Get the slow cooker ready with foil: Rip 4 big sheets of strong foil, each 12-14 inches long. Fold up the edges a bit to make little boats so sauce stays in. Put the sheets inside a 5-7 quart slow cooker, overlapping a touch to make 4 spots. They should fit tight but let the lid close all the way.

  2. Put in the chicken: Dry the chicken with paper towels. If any are super thick, cut them sideways for even cooking. Put one chicken breast (or same size piece) in the middle of each foil sheet in the cooker.

  3. Add BBQ sauce: Spoon about 1/4 cup sauce on each chicken. Spread it with the spoon back so the top is covered. Save the rest of the sauce for later and serving.

  4. Add pineapple: Split the drained pineapple chunks equal over the chicken. Let it sit on top and around in each foil boat. It will make some juice that mixes with sauce for a yummy glaze.

  5. Close the packets: Pull up the long sides of foil over the chicken and pineapple. Fold them down a few times for a good seal. Fold and squeeze the short ends tight so nothing leaks. Now you have 4 packs snug in the cooker.

  6. Cook slow: Put the lid on. Cook on LOW 4-6 hours, or HIGH 2 1/2-3 1/2 hours, till chicken is soft and hits 165°F inside. Time depends on your cooker and chicken size.

  7. Let it rest and check: Turn off cooker. Let packs sit covered 10 minutes. Open one carefully (steam is hot!). Cut the thickest chicken spot—it should pull apart easy with a fork.

  8. Add more sauce if you want (it’s great!): Spoon some saved BBQ sauce over the hot chicken and pineapple in each pack. Or mix pack juices with extra sauce in a bowl for a drizzly glaze.

  9. Serve it up: Use tongs or a spatula to lift each pack to a plate or bowl. Open wide and eat right in the foil for fun, or slide out onto plates. Pour extra juices on top. Serve hot with sides you like.
