1 1/2 pounds cut chicken thighs in 1-inch pieces

3 Tablespoons general purpose flour

1/2 teaspoon salt, and more salt to season

6 cloves garlic, minced

1 onion, diced

3 carrots, peeled and sliced

2 large potatoes, peeled and cut into 1/2-inch cubes (1 pound)

3 cups chicken broth

1 bay leaf

1/2 cup milk

1 cup green peas, frozen

Basic Slow Cooker Chicken Stew: Instructions

Place chicken on a cutting board and cut it into 1-inch pieces. Spice it with salt and pepper.

Put the olive oil on a large skillet and add the chicken. Cook about 4-5 minutes until browned. You can just sear it and then put it in the slow cooker.

After browning the chicken, put it into the slow cooker. Stir in flour, thyme, rosemary, and salt until the chicken is coated.

Add garlic, onion, carrots, and potatoes to the slow cooker and stir. Add the broth and put in the bay leaf.

Cover the pot and cook on LOW for 7–8 hours or on HIGH for 3–4 hours.

Once cooked, add frozen peas and milk. Stir and cook 10-15 minutes on HIGH until peas are warm. Adjust stew thickness with extra flour or broth if needed.
