This six-ingredients slow cooker sweet and savory barbecue beef is a meal that can be termed as a set-it-and-forget-it meal because it makes a hectic day a little lighter. It is based on the type of potlatch sandwiches that I have been used to here in the Midwest; very basic, very substantial, and centered around a good bottle of barbecue sauce. beef chuck roast → 3-3 1/2 pounds, all excess fat removed.

bottled barbecue sauce (your brand) → 2 cups

brown sugar, packed → 1/2 cup

apple cider vinegar → 1/3 cup

medium yellow onion, thinly sliced. → 1

Worcestershire sauce. → 1 tablespoon

fine sea salt (or to taste) → 1 teaspoon

black pepper → 1/2 teaspoon
Barbeque Beef Slow Cooker: Directions

Put the chopped onion in a single layer at the bottom of the slow cooker. This provides the beef with a delicious bed to lie on and does not allow it to stick.

Use paper towels to dry the beef chuck roast, and season all over with the salt and pepper. Put the roast over the onions in the slow cooker.

Combine the bottled barbecue sauce, brown sugar, apple cider vinegar and Worcestershire sauce in a medium bowl or large measuring cup; stir till mixed well.

Pour the barbecue sauce mixture over the uncooked beef chuck roast evenly into the slow cooker ensuring the top of the roast is well moistened just as in those close-up process shots where you see the sauce covering the meat.

Add the lid and cook on LOW or HIGH 8-10 or 4-5 hours respectively until the beef is extremely tender and can be pulled to pieces with a fork.

Turn the cooked roast carefully to a large bowl or cutting board. Two forks are used to pull beef into bite size pieces, discarding any large pieces of fat.

Scoop out any excess fat on the top of the cooking liquid in the slow cooker, where necessary. Put the shredded beef into the slow cooker again and mix to cover it with the sweet and savory barbecue sauce. Add more salt or pepper according to taste.

Switch the slow cooker to WARM and allow the beef to simmer in the sauce 10-15 minutes to allow the flavors to infuse it. Serve it hot on buns, over mashed potatoes, or in any way your family favorite is.
Variations & Tips
In case picky eaters, then choose a barbecue sauce that is less hot and sweet and reduce the quantity of apple cider vinegar to 1/4 cup to make the flavor not so strong and tangy. In case your crew prefers a kick, add 1-2 teaspoons of chili powder or a pinch of red pepper flakes to the mixture of the sauce. You can also add a cup of finely chopped bell peppers or carrots to the top of the onions before you add the roast; they will cook down and become part of the sauce. A smoky flavor can be achieved by smoky-style barbecue sauce, but 1/2 teaspoon of smoked paprika will be added. In case you require it a little lighter, you can replace part of the chuck roast with a leaner cut such as bottom round, just be aware that it will not be as rich and tender. It is also quite tasty with boneless pork shoulder in case your family likes pulled pork- the ingredients and instructions are the same, only you need to see how tender they are after about 7-8 hours on LOW. Small portions of left overs freeze very well, and thus make easy quick lunches, or a quick meal in the event that everyone is running in different directions on a particular night.
