Use 3 pounds of chicken breasts or thighs without skin or bones.

2 big sweet onions, cut into thin slices

1 cup sweet onion dressing (or Vidalia onion vinaigrette)

1/2 cup low-salt chicken broth

Cut onions into thin slices. Spread them flat on the bottom of a big slow cooker (5-7 quarts). They stop chicken from sticking and make the sauce.

Put chicken in one flat layer on the onions. It’s okay if they touch a bit, but don’t pile high so it cooks even.

Mix dressing and broth in a bowl till smooth. This turns into shiny brown sauce.

Pour mix over chicken and onions. Spoon some onions around sides so everything gets wet.

Put lid on. Cook on LOW 4-6 hours or HIGH 2.5-3.5 hours. Chicken gets soft and shreds easy. Don’t peek!

Turn to WARM. Shred chicken with two forks right in cooker. Mix with soft onions.

Stir till sauce coats everything. Onions mix in nice. Sauce looks shiny and brown.

Taste. Add a little salt or pepper if you want (dressing has some already). Stir and let sit on WARM 10-15 minutes to soak sauce.
