Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 8 ounces angel hair pasta
- Fresh parsley, chopped, for garnish
Angel Chicken Pasta: Directions
- Sprinkle both sides of the chicken breasts with a good amount of salt and pepper.
- Pour the olive oil into a big skillet and heat it up over medium-high heat. Place the chicken in the pan and let it cook for about 6 to 7 minutes on each side, until it turns golden brown on the outside and is fully cooked inside. Put the chicken on a plate and let it cool for a few minutes.
- Turn the heat down to medium. Drop the butter into the same skillet and let it melt. Add the minced garlic and stir it around for about 1 minute until it smells really good.
- Pour the chicken broth into the skillet and let it bubble. Use your spoon to scrape up all the little brown bits stuck to the bottom of the pan — that is where a lot of the flavor is hiding.
- Pour the heavy cream into the pan, then mix in the Parmesan cheese and Italian spices. Stir everything together and let it cook for 3 to 4 minutes until the sauce gets a little thicker.
- While the sauce is cooking, boil the angel hair pasta in a separate pot following the directions on the box. Drain it when it is done and set it aside.
- Put the chicken back into the skillet and spoon some of that creamy sauce right over the top. Let everything heat together for about 2 to 3 more minutes.
- Lay a good handful of angel hair pasta on each plate, then set a piece of chicken right on top. Pour extra sauce over everything and finish with a sprinkle of fresh chopped parsley.
