Amish Sausage and Noodle Bake

Ingredients

  • 1 pound sausage, cut into 1/2-inch rounds, smoked.

  • 1 (10.5-ounce) can cream of celery soup

  • 1 1/2 cups low sodium chicken broth.

  • 2 cups uncooked wide noodles of eggs.

  • 1 cup frozen combination of vegetables (peas and carrots)

Amish Sausage and Noodle Bake: Directions

  1. Liberally spray the inside of a 4 to 6 quarts slow cooker with cooking oils or a non-stick cooking spray to prevent sticking.

  2. Evenly layout the sliced sausage smoked on the bottom of the slow cooker making a single layer as most as possible.

  3. Whisk together the cream of celery soup and chicken broth in a medium bowl until smooth and may be poured. This aids in evenly spreading the soup and prevents the noodles in forming clumps in the end.

  4. Pour the cream of celery soup mixture into the slow cooker over the sliced smoked sausage making sure that all the sausage is largely covered by the sauce.

  5. Evenly sprinkle uncooked strands of egg noodles over the top of the sausage and soup mixture. Stir not; it is better to have them on the top so that they steam rather than grow mushy.

  6. Now sprinkle the frozen mixed vegetables over the noodles and do not stir. The mixture will be heated, which will make them thaw and cook and add color and a bit of sweetness.

  7. Cover the slow cooker with the lid and cook on LOW 3 to 4 hours, or HIGH 1 1/2 to 2 hours till the noodles are soft but not mushy and the sausage is warm.

  8. When the noodles have been softened, toss all the contents together, using a large spoon in order to cover the noodles and vegetables in the creamy sauce and to distribute the sausage in it.

  9. Add and mix seasoning (a small amount of salt and black pepper) to taste but bear in mind that smoked sausage and canned soup are already seasoned.

  10. Bake the sausage and noodle hot out of the slow cooker. In case the mixture appears to be more viscous than desired, it is possible to add a splash of warm chicken broth or milk to thin the mixture before serving.
