What You Need

1 1/2 pounds hamburger meat (not too fatty)

4 cups tomato juice

3 cups frozen veggie mix (peas, carrots, corn, beans)

1 cup dry small pasta (like elbows)

1 onion, chopped up (about 1 cup)

2 teaspoons salt (or less if you want)
How to Make Amish Hamburger Soup Slow Cooker

Put your slow cooker on the table without the lid. Break up the raw hamburger into little bits across the bottom.

Spread the chopped onion on top of the meat. This mixes the onion taste right in.

Put the frozen veggies over the meat and onion in a flat layer.

Shake salt over everything. You can add more later.

Slowly pour tomato juice over it all. Make sure the meat gets wet and covered. Shake the cooker gently if you need to.

Put the lid on. Cook on low 6-7 hours or high 3-4 hours. Meat cooks fully, veggies get soft—no need to cook meat first.

30 minutes before eating, stir hard. Break up big meat bits. Add dry pasta and push it into the juice.

Put lid back. Cook on high 20-30 more minutes till pasta is soft but not soggy. Stir once or twice so it doesn’t stick.
