Ingredients

  • Use 2 to 2½ pounds of smoked ham hocks or thick ham shanks.

  • 2 pounds fresh green beans, ends cut off and snapped in half

  • 2 pounds yellow potatoes, washed and chopped into quarters

  • 6 cups low-salt chicken broth

  1. Stack the items in the slow cooker: Put ham hocks at the bottom of a big 5–7 quart cooker. Add potato chunks on top, then pile on the green beans.

  2. Add the broth: Pour chicken broth over it all slowly. Liquid should cover most potatoes and beans—some sticking out is fine, as they’ll shrink.

  3. Cook with lid on: Set to LOW for 7–8 hours, or HIGH for 4–5 hours. Ham gets tender, beans soften, and potatoes mash easy with a fork.
