- 3 pounds russet or Yukon gold potatoes, scrubbed and cut into 1½-inch chunks
- 2 cups apple cider (make sure it is not vinegar)
- 2 tablespoons unsalted butter, cut into small pieces
- 1.5 teaspoons kosher salt

1. Grease the slow cooker
Rub a little butter or use nonstick spray inside a 4- to 6-quart slow cooker. This helps keep the potatoes from sticking.
2. Add the potatoes
Place all the potato chunks into the slow cooker. Spread them out evenly so they cook the same way.
3. Season and add butter
Sprinkle 1.5 teaspoons of kosher salt over the potatoes. Then scatter the small butter pieces on top so they melt slowly while cooking.
4. Pour in the cider
Slowly pour the apple cider over the potatoes, making sure each piece gets a little wet. The cider should reach about halfway up the potatoes, not cover them fully.
5. Cook low and slow
Cover with the lid.

or - Cook on HIGH for 2½ to 3 hours
The potatoes are ready when they are soft and easy to poke with a fork.
6. Stir and taste
Gently stir the potatoes so they coat in the buttery cider at the bottom. Taste and add more salt if needed.
7. Serve warm
Scoop into a bowl or onto plates while warm. Spoon some of the cider liquid from the bottom over each serving for extra flavor.
