1 1/2 pounds ground beef (80-90% lean, raw)

4 cups chicken low sodium broth.

1 can (10.5-ounces) condensed cream of potato soup.

1 can (10.5-ounce) canned cheddar cheese soup.

1 cup shredded mild or sharp cheddar cheese (packed)

Put the uncooked ground beef at the bottom of a 5 to 6-quart slow cooker. Softly chop it into large pieces with a spoon or your hands to allow it to cook evenly though there is no cause to worry about chopping it into small pieces.

Pour the chicken broth into the uncooked meat in the slow cooker ensuring that all the meat is moistened. It is the foundation on which the beef will be cooked and transformed into a tasty soup.

Pour the condensed cheddar cheese soup and condensed cream of potato soup in the slow cooker. The soups should not be diluted with water. Gently stir to mix the soups and the broth around the beef keeping the beef in small chunks.

On LOW cook 6 to 7 hours or HIGH cook 3 to 4 hours until the ground beef is well cooked and when it can be stirred with the tip of a knife and easily separates. About half an hour into the cooking time give a slight stir to the soup because the beef still needs to keep breaking up and to ensure the entire cooking is well balanced.

After the beef has been cooked and the soup appears to be thick and creamy, add the shredded cheddar cheese one- handful at a time until melted and smooth. Add salt and black pepper to taste (the canned soups and cheese are already salty, so do not add any more).
