This Amber-Glazed Pineapple Slow Cooker is perfect for days when the grill is busy and dessert should make itself. Think of soft pineapple pieces in a shiny, sweet-brown sauce made from brown sugar, butter, and a little soy sauce. The slow cooker’s gentle heat turns the fruit and sugar into a warm, sticky treat everyone will enjoy.
Warm, sticky pineapple cooked slowly in a buttery brown-sugar glaze with a hint of soy. Serve it over ice cream, cake, or eat it by itself. Easy to make in a slow cooker using just four ingredients—great for family meals, barbecues, or quick, sweet desserts that need almost no work.
Servings: 8–10
Ingredients
-
2 cans (20 ounces each) pineapple chunks in juice, drained well
-
1 cup packed dark brown sugar
-
1/2 cup (1 stick) unsalted butter, cut into pieces
-
2 tablespoons soy sauce (regular or low-sodium)
Amber-Glazed Pineapple: Directions
-
Lightly grease the inside of a 4- to 6-quart slow cooker with a thin film of butter or a neutral oil so the pineapple won’t stick.
-
Spread the drained pineapple chunks in a single layer across the bottom of the slow cooker so the pieces stay separate but will cook tender.
-
In a small saucepan or microwave-safe bowl, add the dark brown sugar, butter pieces, and soy sauce. Heat gently on low (or in short microwave bursts) just until the butter melts. Stir until the mixture is smooth and looks like a loose, dark caramel.
-
Pour the warm amber glaze over the pineapple. Use a spoon or spatula to gently mix so most pieces get coated without breaking them.
-
Put the lid on the slow cooker and cook on LOW for 3 to 4 hours, or on HIGH for 1 1/2 to 2 hours. The pineapple should be very soft but still hold its shape, and the sauce should be thick and sticky.
-
When done, switch the slow cooker to WARM and let the dessert sit, covered, for 15 to 20 minutes so the glaze thickens a little more.
-
Stir gently from the bottom to coat the fruit with sauce, being careful not to mash the pineapple. Taste and add a tiny pinch of salt if you want a stronger savory hint from the soy.
-
Serve warm. Spoon the pineapple and lots of sticky glaze over vanilla ice cream, angel food cake, or pound cake, or place bowls of ice cream and toppings nearby so people can make their own sundaes.
