The slow cooker makes the meat super soft, like it melts in your mouth. The juice turns dark and tasty, like you worked hard all day. It’s quick for busy nights but feels special for parties.

Put lots of juicy meat on soft rolls or buns. Dip in warm juice on the side. Pair with green salad, crunchy slaw, or baked veggies for a light meal. Or go old-school with chips, pickles, and fruit. For groups, keep meat warm and let folks make their own.

  • 3 to 4 pounds beef chuck roast (cut off extra fat)

  • 2 packets (1-ounce each) dry onion soup mix

  • 3 cups low-salt beef broth

  • 6 soft hoagie rolls or sub buns (for eating, if you want)

Slow Cooker French Sandwiches: Directions

  1. Put the beef roast in a big slow cooker (5-7 quarts is good). Put the fatty side up so it makes the meat juicy while cooking.

  2. Shake the onion soup mix all over the top and sides. Press it so it stays on the meat.

  3. Pour broth around the sides of the meat. Don’t wash off the mix on top. Liquid should cover half the meat.

  4. Put on the lid. Cook it on LOW heat for 8 to 10 hours or HIGH heat for 4 to 5 hours. Meat is ready when a fork shreds it easy. LOW is best for super soft texture.

  5. Move meat to a plate or bowl. Leave juice in cooker. Scoop off big fat blobs from juice if you want.

  6. Use 2 forks to pull meat into small bits. Throw away big fat pieces. If not soft, cook more 30-60 minutes.

  7. Put shredded meat back in cooker. Mix with hot juice. Set to WARM 10-15 minutes to soak up taste. Taste juice; add water if too strong.

  8. Warm rolls if you like. Use tongs for lots of meat on each roll. Let extra juice drip back. Put juice in bowls for dipping.

  9. For crispy edges like the picture, broil sandwiches on a sheet 2-3 minutes. Watch so they don’t burn!
