My grandma made this when money was short. Only 4 things needed! It makes super soft, yummy meatballs that feed everyone on the block.

These cheap, cozy meatballs use just ground meat, rice, tomato soup, and water. They puff up with soft rice bits poking out, like little porcupines. Mix in the morning, cook all day, and dinner’s ready for a crowd. No fancy stuff needed!

What to Serve It With
Scoop meatballs from the cooker with lots of red sauce on top. Eat over mashed potatoes, noodles with butter, or plain rice to make it go further. Add green beans, salad, or peas with butter. Bread mops up the sauce!

Serves 6-8

Ingredients

  • 2 pounds ground beef (80-85% lean)

  • 1 cup uncooked long-grain white rice

  • 2 cans (10.5 oz each) tomato soup

  • 1 1/2 cups water

Porcupine Meatballs Slow Cooker: Directions

  1. In a big bowl, mix beef and uncooked rice. Use clean hands to blend gently. Don’t squish too much—keeps them soft!

  2. Roll into 1 1/2-inch balls (about 24-28). Put on a plate.

  3. Spray your slow cooker so nothing sticks. Place meatballs in one tight layer. Stack a second if needed, fitting them in gaps.

  4. Whisk soup and water in a bowl till smooth, like thin sauce.

  5. Pour over meatballs. Cover them well. Tilt cooker to spread sauce.

  6. Put on lid. Cook it on LOW heat for 6-7 hours or HIGH heat for 3-4 hours. Meatballs done when no pink inside, rice soft, sauce bubbly.

  7. Lift lid away from you (steam’s hot!). Spoon sauce over tops. Serve hot with extra sauce!
