Ingredients

  • 4 pork chops with bones, about 1 inch thick (6-8 ounces each)

  • 1 1/2 pounds potatoes (like russet or Yukon Gold), peeled and chopped into 1-inch pieces

  • 1 can (10.5 ounces) cream of mushroom soup

  • 1 packet (1 ounce) dry onion soup mix

Foil-Packet Pork Chops and Potatoes: Directions

  1. Get the slow cooker ready: Spray the inside lightly with cooking spray so food doesn’t stick. Cut 4 big sheets of strong foil, each 12-14 inches long, and lay them out.

  2. Make the sauce: In a bowl, mix the cream of mushroom soup and onion soup mix until smooth. This yummy stuff will flavor the pork and potatoes and turn into gravy.

  3. Build the packets: Put equal piles of potato chunks in the middle of each foil sheet. Lay one pork chop on top of the potatoes in each one.

  4. Add the sauce: Spoon 2-3 big scoops of the soup mix on each pork chop. Let some drip down to the potatoes. Spread it around a bit with the spoon so everything gets coated.

  5. Wrap it up tight: Fold the long sides of the foil over the top and crimp them closed. Fold up the short ends to seal each packet well. This keeps the steam inside for super tender pork and gravy.

  6. Cook it up: Put the packets in the slow cooker. Stack if needed, but keep them flat. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours. Potatoes should be soft, and pork easy to pull apart with a fork. Don’t peek!

  7. Check and rest: Turn off the cooker. Wait 5 minutes. Open one packet carefully (steam is hot!). Pork should be 145°F inside, potatoes soft.

  8. Serve hot: Open all packets. Put pork and potatoes on plates. Pour the gravy juices from the foil on top. Add salt or pepper if you like—the soup mix is salty already.
