Syrup sponge pudding… Must admit to making quite a lot of main meals in my pressure cooker but the slow cooker is a must for puddings!.. it is only a tiddler as only 2 of us eating it…but you can scale up if you want to use a larger basin.. this was a ltr I think..
Ingredients:
4oz self raising flour
4 oz butter – slightly softened
4 oz caster sugar
2 eggs
Lemon zest
2 tbs milk
2 -3 tbs golden syrup
Method:
I put all ingredients apart from syrup in a mixing bowl, beat until smooth, grease your pudding bowl add syrup to the bottom add mixture on top if basin has a lid you can use that if not a bit of foil secured with string..
Put bowl in slow cooker.. hot water halfway up high for 3-4 hours.
