Slow Cooker Chocolate chip banana Cake

Ingredients:

3oz butter
4oz caster sugar
1 large egg
8oz s-r flour
2tsp baking powder
4 medium bananas, mashed
2oz choc chips

Method:

Beat together the butter, sugar & egg (I used my mixer but you can do it by hand). Sift in the flour & baking powder. Don’t worry if it looks too dry at this stage. Add the mashed bananas & choc chips & mix thoroughly. Pour into a lined slow cooker (mine is a 3l one). I also sprinkled a few extra chips on top. Leave on high for 2-2.5 hours with a tea towel under the lid.

Question…                  Do u need a liner? I understand it’s easier for clean up but is it necessary for any other reason..
Also.. why a tea towel under the lid??

Answer:                      I use a giant paper cake case & two long strips of greaseproof paper crossed underneath it. Makes it much easier to lift the cake out at the end. You could just line it with normal baking paper. Or skip it altogether & grease the pot but I’ve never tried it, so can’t guarantee it won’t stick.

Question:                   Do you have to line slow cooker – could I just grease it?

Answer:                      I think you could but I haven’t tried it. I always fold mine up over the top of the lid to stop it hanging.

Question:                   Can I ask how deep the cake liner is please. Having a look but the ones I have seen are 2.5″ deep and that doesn’t see deep enough unless making two! TIA

Answer:                     These are the same & plenty deep enough. I’ve used these for Betty Crocker cakes & they always rise higher than the case. I cut them in half to ice the middle.

Question:                   What can we use for the lined paper greaseproof or can we use foil.

Answer:                      Not sure about foil. Give it a go, I guess. Might get too hot & burn the edges perhaps?
You can use baking parchment, greaseproof paper, or a giant paper cake case. Or you could possibly try just greasing the pot & hoping it doesn’t stick!

Question:                  Where can I get liners..

Answer:                     I use giant paper cake cases. Mine were from Asda but I’ve seen them in Tesco too.
