Servings: 16
Ingredients
- Lemon cake mix → 1 pieces (15.25–16.5 oz box)
- Unsalted butter, melted and a little cooled down → 0.5 cups
- Lemon pie filling → 1 pieces (21 oz can)
3-Ingredient Lemon Bars: Steps
- Warm up the oven and get your dish ready: Turn your oven on to 350°F. Let it get nice and hot. Grab a 9×13 glass dish and rub a little butter inside it, or spray it with cooking spray. A glass dish is really cool to use because you can see the yellow layers through the sides!
- Mix the crust stuff: Pour the dry lemon cake mix into a bowl. Then pour the 0.5 cups unsalted butter, melted and a little cooled down in too. Stir it all up with a fork until it looks like wet sand at the beach. Make sure there are no dry white spots left — keep mixing until it all looks the same.
- Push the crust into the dish: Take about two big scoops (around two-thirds) of your mix and put it in the dish. Press it flat with your fingers or the bottom of a cup. Push it into all the corners too. This is going to be your bottom crust layer!
- Put the lemon filling on top: Open your can of 1 pieces lemon pie filling (21 oz can) and spoon it on top of the crust. Spread it out slowly and carefully with the back of a spoon. Try not to push too hard — you don’t want to mess up the crust under it. It should look bright yellow all the way across!
- Sprinkle the crumbly top: Take the rest of your cake mix and sprinkle it all over the lemon filling. Don’t press it down — just let the little clumps fall on top. Those bumpy little pieces are going to turn golden and yummy in the oven!
- Bake it!: Put the dish in the middle of the oven. Bake it for 25 to 27m 30s
27:30
. When it’s ready, the top will look a little golden and you’ll see the lemon filling starting to bubble around the edges. The middle might still look soft — that’s okay! It gets firmer when it cools down. - Let it cool all the way down: Take the dish out and put it on a cooling rack. Leave it alone until it’s not hot anymore. Then put it in the fridge for at least 1 to 120 minutes
120:00
. This helps it get firm so it cuts into nice clean squares. - Cut and share!: Once it’s cold and firm, use a sharp knife to cut it into 16 squares. Clean the knife after each cut so the edges look neat. Serve them right from the glass dish — everyone will see that pretty yellow filling and golden top and want to grab one fast!
