What You Need
- 4 chicken breasts with no bones or skin (about 2 pounds)
- 1 teaspoon salt, split into two halves
- ½ teaspoon black pepper, split into two halves
- 1 can (14.5 oz) crushed tomatoes
- 1 cup heavy cream
- ½ cup Parmesan cheese, grated small
- 2 teaspoons dried basil
- 3 garlic cloves, chopped up tiny
- ½ teaspoon red pepper flakes (use less if you don’t like spicy)
- 2 tablespoons olive oil or melted butter
- 1 teaspoon sugar (if you want — it makes the tomatoes less sour)
- A little extra Parmesan and basil for the top when serving
How To Make Tomato Basil Chicken
- Turn your oven on to 375°F. Get out a big glass baking dish and set it on the counter.
- Use paper towels to dry off your chicken breasts. Sprinkle half the salt and half the pepper on both sides of each piece. Place them flat in the baking dish with a little space between them.
- In a bowl, mix together the crushed tomatoes, heavy cream, Parmesan cheese, dried basil, chopped garlic, red pepper flakes, olive oil or butter, the rest of the salt, the rest of the pepper, and sugar if you’re using it. Stir it all up until it looks smooth and creamy.
- Pour that creamy tomato mix all over the chicken. Make sure every piece gets covered. Use a spoon to push the sauce into the corners so nothing is left dry.
- Cover the dish tightly with foil and put it in the middle of the oven. Bake for 25 minutes.
- After 25 minutes, carefully take off the foil — watch out, it’s steamy! Put the dish back in the oven with no cover and bake for 15 to 20 more minutes. The chicken should reach 165°F inside, and the sauce should be bubbly and a little thick.
- Take the dish out of the oven. Let the chicken sit in the sauce for 5 to 10 minutes before eating. This helps everything settle and get even tastier — just like the old-school baked meals grandma used to make!
- Spoon the sauce over each chicken piece when you serve it. Add a little extra Parmesan and basil on top if you like, and enjoy it nice and warm right from the dish!
