Slow Cooker Thai Chicken Noodles Recipe! Soooooo delicious
* Serves 6
Ingredients:
* 4 cups chicken stock
* 400ml coconut milk
* 1/4 cup soy sauce
* 2 tablespoon smooth peanut butter
* 1/4 cup Thai red curry paste
* 2 tablespoon fish sauce
* 2 tablespoon honey
* 1 tablespoon sesame oil
* 2 large skinless chicken breast
* 1 red capsicum chopped
* 1 teaspoon minced ginger
* 2 teaspoon minced garlic
* 4 serves of noodles (I used Singapore noodles)
* 250g baby spinach chopped
* 1/3 cup fresh coriander, chopped
* chopped peanuts for serving
Instructions:
* In slow cooker, add chicken stock, coconut milk, soy sauce, peanut butter, curry paste, fish sauce, honey, sesame oil, chicken, capsicum, ginger and garlic. Cover and cook on on high for 4 hours.
* Remove chicken. Add to slow cooker noodles, spinach and coriander. Let sit for 4 to 5 minutes or until noodles are soft. Shred chicken. Add back to slow cooker & stir. Serve immediately and top with peanuts.
