Slow Cooker Rabbit Stew
Ingredients:
1 x Onion (chopped)
2 x Cloves of garlic (crushed)
2 tbsp x Tomato puree
2 x Bay leaves
1 tsp x Mixed herbs
180ml Beef stock
150ml Red wine
Combination of any: Potatoes, leek, carrots, celery, peas or spinach (peas / spinach would go in 1 hour before end)
Directions:
Brown meat in a little oil then set aside.
In same pan soften onions for 5 minutes then add garlic for 1 minute then add wine and reduce (5 minutes ish).
Chick everything into the slow cooker and on low for 6-8 hours depending on what meat you used (I separated the meat after 6 hours and then added it back in with the spinach for about 45 minutes).
