Minced beef
Ingredients:
- 400g minced beef
- 1 diced onion
- 1 diced carrot
- 1 can of chopped tomatoes (400g)
- 5 small potatoes, cut like chunky chips
- A few baby plum tomatoes
- A few mushrooms
- 1 vegetable stock cube (oxo)
- 1tbsp Worcestershire sauce
- 2 balls of frozen spinach (or fresh, but I’d add that later)
- 1tsp oregano
- Dried bay leaf
- Cup of frozen peas, added 1/2hr before serving
Method:
First i mixed the carrots, veg stock cube, Worcestershire sauce, oregano in a bowl with the tin of chopped tomatoes and left in the fridge overnight (I also added a little red wine, optional).
Then i browned the mince and the onions in a pan, added all (except the peas) into my slow cooker. Now stirred well. Put the lid on and cook on low 8-10 or high 4-6.
