Slow Cooker Chicken Stew
Ingredients:
– 2 pounds boneless, skinless chicken thighs
2 tbsp olive oil
– 4 carrots, sliced
– 3 potatoes, diced
– 1 onion, chopped
– 3 cloves garlic, minced
– 4 cups chicken broth
– 1 cup frozen peas
– 2 tablespoons tomato paste
– 1 tablespoon Worcestershire sauce
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)
Instructions:
1.first add olive oil in the pot of slow cooker and then add chopped onion, mince garlic and fry on medium heat until light brown . Then Put the chicken thighs inside the slow cooker and stir. Now add , carrots, diced potatoes on top of the chicken.
Now take a separate bowl and add water, chicken broth, tomato paste, dried thyme, Worcestershire sauce, dried rosemary, salt and pepper to it and make a mixture. Now pour this mixture over all the ingredients in the slow cooker.
Now let this chicken stew cook on low heat for seven to eight hours until the chicken is completely soft and well cooked.
Add frozen peas 30 minutes before cooking and let it cook for the remaining time.
When the chicken is cooked, shred the chicken with two forks and stir it back into the stew. Add spices if needed.
Serve garnished with fresh parsley.
