Ingredients

  • cubed beef stew meat → 2 pounds

  • dry onion soup mix. → 1 (1-ounce)

  • low-sodium beef broth (low sodium is desirable) → 2 cups

Slow Cooker Beef: Directions

  1. Using the cubed beef stew meat, place it in the bottom of a 4- to 6-quart slow cooker, laying it out into an even layer to guarantee even cooking.

  2. Sprinkle the dry onion soup mix lightly over the beef avoiding most of the meat being overly covered with the seasoning. This will develop the base flavor and assist to produce that dark and shiny sauce.

  3. Add the beef broth to the seasoned meat and barely blend it, taking care not to stir it into a soup, but rather tossing the soup mix around within the liquid without disturbing the beef.

  4. Cover the slow cooker with a lid and cook on LOW 7 to 8 hours or on HIGH 3 1/2 to 4 hours until the beef is extremely tender and can be torn apart using a fork. The stew meat contains collagen that will also be broken down to enrich the sauce during this time.

  6. Gently simmer the beef tips in the sauce until all the pieces are covered and shiny, and then serve hot over the mashed potatoes, noodles or rice of your choice and pour lots of the savory brown sauce over the top.
