Slow Cooker Rabbit with baby onions
Ingredients:
1 rabbit ( cut into pieces)
2 onions chopped
3 cloves of garlic chopped finely
2 carrots cut into chunks
3 celery sticks cut into chunks
1 tin of chopped tomatoes
1 glass of red wine
Cinnamon stick
3 bay leaves
Salt and pepper to taste
30 small baby onions peeled
Marinade ingredients
Wine about 4 glasses
2 bay leaves
1 cinnamon stick
10 peppercorns
Directions:
In a large bowl put rabbit pieces add all ingredients and cover with the wine and leave it overnight.
Next day drain rabbit remove cinnamon stick bay leaves & peppercorns .
Dry rabbit pieces with kitchen paper and sauté pieces with some flour.
Put pieces in slow cooker .
Then in same fry pan you sauté the rabbit sauté the chopped onions garlic and add the wine let it evaporate and add tomatoes bay leaves and cinnamon stick cook for about a minute then add it to slow cooker with the rabbit.
Cook on low for 2 hours .
Add baby onions and Cook a further 2 hours or until soft .
Optional if you like add a chilli
