Poor Man’s Mid-May Chicken: Directions
-
Spray a 5- to 6-quart slow cooker lightly with cooking spray to make cleanup easy. Put raw chicken legs in one tight layer at the bottom, meat side down and bones in the middle. They can overlap a bit, but keep most touching the bottom for even cooking.
-
In a bowl, mix cream of chicken soup, onion soup mix, and water with a whisk until smooth and thick like gravy.
-
Pour the mix over the chicken. Spread it with a spoon so every piece gets covered. You should see chicken under the sauce.
-
Put the lid on. Cook on LOW 6-7 hours or HIGH 3-4 hours, until chicken is soft and hits 165°F inside. Meat pulls off bone easy.
-
Taste sauce. Add salt or pepper if you want. Spoon chicken on a plate and pour gravy over it. Serve hot with rice, noodles, salad, beans, or bread.
-
For easy eating, take out chicken, cool a bit, pull off meat and toss bones/skin. Mix meat back in sauce. Great over rice or in wraps.
Serve over soft rice or buttery noodles to grab all the yummy sauce. Add a quick salad, steamed beans, or oven veggies. For groups, give bread to scoop every bit. Leftovers shred nice for lunch wraps.
