Parmesan Stuffed Chicken Breast! Was nervous about a bread based stuffing but was delicious.
Ingredients:
2 large chicken breasts
1 cup stuffing mix
1/2 cup Parmesan
1 tsp garlic
6-8 sun dried tomatoes
2 tbs pine nuts
2 handfuls spinach/rocket mix
4 slices ham to wrap (had no bacon)
Directions:
Pop spinach/rocket in boiling water 30 seconds, drain & chop
Add all ingredients (except for ham) and mix well with a little water until it binds together
Butterfly & flatten chicken breast
Fill with stuffing
Roll then wrap in ham
Wrap firmly in foil
I sat on trivet in slow cooker with 1-2 cm water in slow cooker bowl
Cooked on low 2-3 hours
Crisp under hot grill 3-5 minutes
