2 pounds pork belly with skin, chopped into 1-inch pieces

Heat oven to 425°F (220°C). Put a strong glass baking dish on the middle rack while it warms up so it’s nice and hot.

Dry the pork pieces really well with paper towels. This makes the skin crunchy, not chewy.

Put pork in a big bowl. Sprinkle on salt and pepper. Mix with your hands so every piece gets some.

Take out the hot dish carefully and put it on something that won’t burn. Lay pork pieces in one layer, skin up, with space between them for air to move.

Put dish back in oven. Bake 25–30 minutes until fat melts and meat turns pretty brown.

Without taking it out, turn oven to 450°F (230°C). Bake another 15–25 minutes until skin puffs, bubbles, and turns deep gold. Meat should sizzle and get crisp. Turn dish if your oven heats unevenly.

When skin is like crackling, take dish out. Let pork sit in the hot fat 5–10 minutes so juices settle and skin stays crunchy.

Use tongs or a spoon to move bites to a plate, or leave in the dish. Drizzle some fat on top for extra yum. Serve hot!
Serve them warm from the oven in the same dish, with toothpicks for picking. They go great with crunchy cabbage salad, vinegar cucumbers, or green salad to balance the rich taste. For parties, add veggies and dip, or mustard/hot sauce. Try cold iced tea or lemon water!
