Slow Cooker Lamb Shank Soup Recipe
Ingredients:
3 French trimmed shanks
3 Carrots – diced
2 Potatoes – diced
3 Celery storks – diced
1 Brown onion – diced
Handful green beans
1 table spoons crushed garlic
1/2 cup Macaroni
4 cups chicken stock
1 small can crushed tomatoes
Salt & Pepper to taste
Brown off the shanks
Instructions:
Add the garlic & veggies to the slow cooker & sauté till softened then add the stock, tomatoes & shank & cook for 4 hours on high.
After the 4 hours remove shanks & shred the meat!
If your slow cooker insert can go on the stove top, bring soup to the boil & add macaroni & beans, cook till al dente!
Serve with freshly cropped basil & parmesan!
