Cucumber Kick Snack… This zero-point cucumber “bang” is my fave quick bite now! It’s crisp and fresh, mixed with zingy spices for a fun spicy pop. So easy, tastes amazing, and keeps you full without any junk!

What You Need (makes a big bowl for sharing)

  • 4 medium cucumbers

  • 3 garlic pieces, chopped tiny

  • 2 spoons olive oil

  • 2 spoons vinegar or lemon squeeze

  • 1 tiny spoon salt

  • 1 tiny spoon black pepper

  • 1 tiny spoon red pepper bits (if you like heat)

  • 1 spoon fresh dill, snipped small

  • 1 spoon fresh parsley, snipped small

  • 1 tiny spoon honey (for a sweet touch, if you want)

Cucumber Kick Snack Making Steps

  1. Wash cucumbers clean under water. Scrub off dirt. Leave the skin on for extra crunch—it’s good for you!
  2. Cut them into thin circles. Make them all the same size. Dump in a big bowl.
  3. Chop garlic super small. Fresh is best! Toss it in with cucumbers.
  4. In another bowl, stir oil, vinegar (or lemon), salt, pepper, and honey. Mix until smooth.
  5. Pour wet mix over cucumbers. Stir gentle with a spoon so every piece gets wet.
  6. Snip dill and parsley small. Add them in. Stir again to share the green smell.
  7. Sprinkle red pepper if you want spice. It’s your choice!
  8. Wait 10-15 minutes. Flavors soak in and taste better.
  9. Eat right away! Crunchy, juicy, and full of zip.
